Hi guys, this post was taken from one of my older blogs, due to a request from a close friend of mine. Here's the recipe, enjoy trying it out!
Ingredients: (23 muffins)
Dry ingredients:
- 3 ½ cups of self raising flour
- ½ teaspoon of bicarbonate of soda
- 5 tablespoons of cocoa powder
- 1 cup and 2 tablespoons of caster sugar
- ½ cup of chocolate chip drops.
Decorations:
- Asda's chopped mixed nuts (see picture below)
Wet ingredients:
- 2 cups of warm milk
- ½ cup of sunflower oil
- 2 eggs (beaten)
- 1 teaspoon of vanilla essence
Method:
- Grease muffin tin or line with paper muffin cups.
- Preheat oven to 165° C (depends on your oven).
- In a big bowl, put all of the dry ingredients in and mix.
- In a separate bowl, combine all of the wet ingredients in and stir.
- Make a well in the centre of the dry ingredients mixture, and pour in the wet ingredients. Fold together until it blends and add the chocolate chips (leaving some for decorations at the end).
- Spoon mixture into the prepared muffin tin. Decorate muffin with extra chocolate chips and/or chopped mixed nuts.
- Bake for 20 minutes in the preheated oven (depends on oven), insert a cocktail stick in the centre to check if cooked.
